From Humble Roots to Award-Winning Excellence
Bittersweet Herb Farm is nestled in the beautiful hills of the northern Berkshires along the Deerfield River in Massachusetts. About forty years ago, our humble roots began at the Wallace family chicken farm in Branford, Connecticut—a place where hard work, quality, and family values were cultivated alongside the crops.

What began as a simple commitment to quality ingredients has evolved into a three-generation legacy of artisan excellence. We don't cut corners. We don't use artificial preservatives. We don't add salt to mask inferior flavors. These aren't compromises we're willing to make—ever.
The Foundation
It started with a chicken farm in Branford, Connecticut. The Wallace family understood that quality food begins with care, dedication, and respect for natural processes. These weren't just farming practices—they were family values. Values that said: if you're going to do something, do it right. If you're going to feed people, give them something you'd be proud to serve your own family.
The Vision
Dave Wallace saw something the mass-market food industry couldn't: people were hungry for authenticity. They wanted flavor without the salt. Preservation without the chemicals. Gourmet quality without the pretension. Moving to the picturesque Berkshires, he transformed the family's agricultural heritage into Bittersweet Herb Farm. His commitment to all-natural, preservative-free recipes earned national recognition and thirteen product awards—including top honors at the International Fancy Food Show.
The Future
Now Dakota Wallace steps forward as CEO, bringing fresh energy and modern vision while honoring forty years of family legacy. Growing up in this business taught Dakota that great food is more than ingredients—it's tradition, innovation, and love combined. As the third generation, Dakota carries forward the commitment to handcrafted excellence, sustainable practices, and the belief that great food brings people together. The torch has been passed, but the fire burns brighter than ever.
