Sundried Tomato and Olive Pita with Feta


2 Cups fresh spinach sautéed in 2 Tbsp. olive oil

2 rounds of pita bread

2 Tbsp. Bittersweet Herb Farm Sundried Tomato and Olive Finishing Sauce

1/2 cup sautéed tofu coated with 1 Tbsp. nutritional  yeast (optional)

1/2 cup Vegan Feta cheese (or regular feta cheese)


Place pita bread on a cookie sheet lined with parchment paper. Top each pita bread with Bittersweet Herb Farm Sundried Tomato and Olive Finishing Sauce.  Then add spinach, feta, and tofu.  Broil for about 3 minutes or until cheese is melted.  Enjoy!
