Sundried Tomato and Olive Pita with Feta


2 Cups fresh spinach sautéed in 2 Tbsp. olive oil

2 rounds of pita bread

2 Tbsp. Bittersweet Herb Farm Sundried Tomato and Olive Finishing Sauce

1/2 Cup sautéed tofu coated with 1 Tbsp. nutritional  yeast (optional)

1/2 cup Vegan Feta cheese (or regular feta cheese)


Place pita bread on a cookie sheet lined with parchment paper. Top each piece of pita bread with Bittersweet Herb Farm Sundried Tomato and Olive Finishing Sauce.  Then add spinach, feta and tofu.  Broil for about 3 minutes or until cheese is melted.  Enjoy!
