Quick Curried Chickpeas and Spinach over Rice


2 Cups cooked rice (cooked according to page directions with 1 Tbsp. Bittersweet Herb Farm Garden Harvest Seasoning added to water while cooking.)

2 cups chickpeas

1 package fresh spinach

1 can coconut milk

3-4 Tbsp. olive oil

1/4 cup chopped onion

2 Heaping Tbsp. Bittersweet Herb Farm Spices of India Seasoning


In a large skillet or wok add olive oil and Bittersweet Herb Farm Spices of India Seasoning and mix well.  Add onions and cook until tender. Add chickpeas and toss until well coated. Add spinach and coconut milk and simmer until spinach is wilted and the sauce is thickened to your desired thickness. Salt to taste.  Top your cooked rice with this delicious mixture and Enjoy!
