Lemon Garlic Veggie Kabobs


12 white button mushrooms

1 medium zucchini

1 medium summer squash

12 cherry tomatoes

1 medium onion

1 small red or green pepper

1 small eggplant

1/2 cup Bittersweet Herb Farm Lemon Garlic Finishing Sauce (or any Bittersweet Herb Farm Finishing Sauce)


Cut all vegetables into bite-sized chunks (big enough to stay on skewers) and marinate in 1/4 cup of Bittersweet Herb Farm Lemon Garlic Finishing Sauce for at least 1/2 hour.  Place vegetables on skewers.  Cook on a hot grill for 5 minutes on each side, brushing with remaining Bittersweet Herb Farm Lemon Garlic Finishing Sauce. Enjoy! Serve as a side or even as a meal.
