This recipe is for 1 flat wrap.
1 flour tortilla
1 cup sliced summer squash
1/2 cup sliced sweet Italian or green bell pepper (or your choice of pepper)
Vegan feta cheese (you can use any cheese you desire)
4 slices of ripe tomato
4 Tbsp. Garlic with Rosemary Oil
salt and pepper to taste
Note: You can also add other garden vegetables of your choice
Preheat the oven to 400 degrees. Place a tortilla on a foil-lined cookie sheet and poke a couple of holes with a fork—Bake for 4 to 5 minutes or until golden brown.
In a large skillet, add 2 Tbsp. Garlic with Rosemary Oil, sliced summer squash, sliced pepper, and cook until slightly tender. Add vegetables to the top of the cooked tortilla shell and top with cheese—Bake for ten minutes. Remove from oven. Place the 4 tomato slices on top and drizzle with the remainder of olive oil—salt and pepper to taste. Cut into 1/4's, and you are ready to enjoy!
