Garden Veggie flat wrap with Garlic and Rosemary Oil

This recipe is for 1 flat wrap.  


1 flour tortilla

1 cup sliced summer squash

1/2 cup sliced sweet Italian or green bell pepper  (or your choice of pepper)

Vegan feta cheese (you can use any kind of cheese you desire)

4 slices ripe tomato

4 Tbsp. Garlic with Rosemary Oil

salt and pepper to taste

Note: You can also add other garden vegetables of your choice


Preheat oven to 400 degrees.  Place a tortilla on a foil lined cookie sheet and poke a couple holes with a fork.  Bake for 4 to 5 minutes or until golden brown.

In a large skillet add 2 Tbsp. Garlic with Rosemary Oilsliced summer squash and sliced pepper and cook until slightly tender.  Add vegetable to top of cooked tortilla shell and top with cheese.  Bake for ten minutes.  Remove from oven.  Place the 4 tomato slices on top and drizzle with remainder of olive oil.  Salt and pepper to taste.  Cut into 1/4's and you are ready to enjoy!
