Stretching Your Potatoes

Stage 1 Lemon Garlic Fried Potatoes

Ingredients:

3 pounds of potatoes washed and peeled and cubed.

1 Tbsp Bittersweet Herb Farm Chili Pepper with Garlic Oil

2 Tbsp Olive Oil

1 medium onion chopped

3 Tbsp  Bittersweet Herb Farm Lemon Garlic Finishing Sauce

Directions:

Boil potatoes until tender but firm. Drain reserving the water for later use.

In a large skillet add 1 Tbsp Bittersweet Herb Farm Chili Pepper with Garlic Oil2 Tbsp Olive Oil and 1 medium onion chopped.  Saute onions until tender. 

Reserve 1/2 of the potatoes

Add the remaining  1/2 of the potatoes and stir  in 3 Tbsp  Bittersweet Herb Farm Lemon Garlic Finishing Sauce .  Continue to cook until heated through. 

Save 2 cups of these potatoes for the stage 3 Breakfast Burritos

Plate and Serve!

Stage 2 Zesty Garlic Mashed Potatoes

This step should be done while potatoes are still hot

Ingredients:

Remaining 1/2  Potatoes from Stage One

1/2 Stick Butter

1 Heaping Tbsp Bittersweet Herb Farm Zesty Garlic Seasoning

1/2 cup of reserved potato water (or milk)

Salt and Pepper 

Directions:

Add 1 Heaping Tbsp Bittersweet Herb Farm Zesty Garlic Seasoning to 1/2 cup of reserved potato water (or milk) allow to set for at least 5 minutes to hydrate the Seasoning.  Add butter and potatoes,  Mash to desired consistency.

Stage 3 Breakfast Burrito

Ingredients:

2 Cups Fried Lemon Garlic potatoes reserved from stage 1

1/4 can black beans (or beans of your choice) reserve Aquafaba for future use.

1 Tbsp Bittersweet Herb Farm Mexican Seasoning

1 can diced tomatoes

4-6 eggs scrambled

1/2 cup shredded cheese of your choice

Directions:

Add 1 Tbsp Bittersweet Herb Farm Mexican Seasoning to 1 can diced tomatoes for your Salsa.

Heat 2 Cups Fried Lemon Garlic potatoes reserved from stage 1 and add 1/4 can black beans. Heat thoroughly.  

In a large skillet heat flour tortillas on both sides

Add a 1 Tbsp Salsa, 3 Tbsp scrambled eggs, some potatoes and sprinkle with cheese.  Roll and put in a baking dish opening side down.  Repeat with remaining tortillas.  Top with remaining cheese Bake for 15-20 minutes.
