Southwest Picante Fajitas


1 Tbsp Southwest Picante Seasoning

1 lb of chicken

3 bell peppers (your choice on color I like to get red, green, yellow)

1 large onion

½ Tbsp of coconut oil or olive oil



Preheat oven to 425. Lightly coat the chicken with the Southwest Picante Seasoning. Place the chicken onto a sheet pan. (depending on the cut of chicken you have selected will depend on how long you will need to cook it. I got chicken tenders, they will need 15 minutes to cook). Cut the Onion and Peppers into long strips. Place onions, peppers,oil, and remainder of the seasoning in a large bowl and mix. Place onto the same cooking sheet as the chicken and cook for 15 minutes. Enjoy on top of a salad or in soft fajita shells.

Chefs note: I like to top mine with fresh Cilantro, sour cream, cheese and guacamole. I also like to heat up my fajitas shells for 2 minutes in the oven to get them nice and warm.
