Plant Based Mushroom Broccoli Alfredo

Ingredients:

Cooked pasta of your choice

 2 Tbsp. Olive Oil

1 medium onion coarsely chopped 

2 cups broccoli florets

1/2 cup water

1/2 cup plant-based butter

1 vegetable bouillon cube

1 Tbsp. arrowroot

3 heaping Tbsp. nutritional yeast

1 Tbsp. Bittersweet Herb Farm Zesty Garlic Seasoning

1 cup mushrooms

1 Tbsp. tamari (or salt to taste)

Directions:

In a large skillet add 2 Tbsp. olive oil and sauté mushrooms for about 2 minutes. Remove mushrooms reserving any juice in the pan.  Add onion and broccoli to the pan along with leftover juice.  Cook down adding water until desired tenderness. When almost done add in your sautéed mushrooms. 

In a separate pan over medium heat add butter and bouillon cube and melt.  When melted add arrowroot and stir.  At this time add nutritional yeast and  Bittersweet Herb Farm Zesty Garlic Seasoning.  This will be your Alfredo Sauce.

Mix your sauce and vegetables.  Now add your pasta.  You are ready to serve and ENJOY!
