2 Tbsp Olive Oil
1 package tofu cut into small cubes
1 Tbsp tamari
1 small onion sliced thin
6 cups spiral sweet potato (or your choice of veggie noodles)
1/4 cup water
Greens of your choice
Plant Based Sausage Patties crumbled (or peanuts)
In a large skillet add olive oil, tofu, tamari and onions and cook until tofu starts to brown. Add your spiral cut sweet potato (or your choice of veggie noodle) and water. Cover and let cook until noodles are tender. Remove cover and fry until tofu and onions are brown adding more oil if needed.
Place on top of a bed of greens, drizzling Bittersweet Herb Farm Chipotle Peanut Finishing Sauce on top. Add crumbled Plant Based Sausage Patties (or peanuts) if desired.
