Curried Lentil Soup


2 cups Mirepoix chopped fine (chopped onion, carrots and celery)

4 cups vegetable broth

2 Tbsp. Bittersweet Herb Farm Spices of India Seasoning

1 cup pink lentils

3 Tbsp. Bittersweet Herb Farm Garlic with Rosemary Oil

1 15 ounce can unsweetened coconut milk 

Salt to taste


In a medium saucepan add Bittersweet Herb Farm Garlic with Rosemary Oil , Mirepoix and the Bittersweet Herb Farm Spices of India Seasoning.  Sauté for 3-4 minutes.  If you need to you can add a few Tbsp. of the vegetable broth to keep ingredients from sticking to the pan.  Add the remainder of broth along with the lentils.  Simmer for about 20 minutes and then add the coconut milk and simmer another 15-20 minutes stirring occasionally.  You are ready to Enjoy!
