Chickpea Meatloaf with Smoked Maple Chipotle Finishing Sauce


2-3 Tbsp olive oil

2 stalks celery chopped

1 medium chopped onion

2  small carrots chopped

2 Tbsp tamari

2 15 oz cans chickpeas drained and rinsed and mashed coarsely

1 1/2 cups bread crumbs

1 heaping Tbsp Bittersweet Herb Farm Zesty Garlic Seasoning

1/4 cup plus 2-3 Tbsp Bittersweet Herb Farm Smoked Maple Finishing Sauce

2 Tbsp nutritional yeast

1/2 cup unflavored soy or almond milk

2 Tbsp ground flaxseed added to 2 Tbsp water


In a medium fry pan saute onions, celery, carrots and Bittersweet Herb Farm Zesty Garlic Seasoning  until lightly tender.  Place in a large mixing bowl sauteed vegetables, chickpeas, bread crumbs, nutritional yeast, tamari, flaxseed mixed with water, milk and 1/4 cup Bittersweet Herb Farm Smoked Maple Finishing Sauce.  Mix together well.

Line a loaf pan with parchment paper and add meatloaf mixture forming to pan.  Cover with foil and bake for 30 minutes at 375 degrees.  Remove from oven and spread the remaining 2- 3 Tbsp Bittersweet Herb Farm Smoked Maple Finishing Sauce over the top and bake an additional 15 minutes.  Remove from oven and let cool at least 10 minutes before cutting.  Serve with your favorite side.  Enjoy!
